Filipino Beef Kaldereta Recipe

Beef Kaldereta is a type Filipino beef stew. It makes use of tomato sauce and liver spread (or liver pate). Vegetables such as potato, carrot, green olives, and capsicum are also added.

Caldereta is another way to spell this dish. It is pronounced the same way though. It is popular Filipino dish and is usually cooked and served during special occasions such as birthday parties, town fiestas, and wedding receptions.

The best way to eat kaldereta is to eat it with a cup of white rice. It can also be eaten along with other main dishes.

Other types of meat can also be used to cook this dish. There is “Kalderetang Kambing”, which makes use of chevon or goat meat. Pork kaldereta is another version that makes use of pork.

How to make Filipino Beef Kaldereta:

Cooking up the beef chuck: 

We will kick things off by taking 3 tablespoons of cooking oil, and heating this up in our cooking pot. Then add 5 cloves of garlic you’ve crushed and chopped, along with 1 medium red onion you’ve diced. We will now sauté this together. And then you can put 2 lbs. of beef chuck you’ve sliced up into cubes into the pot. Cook this well until the beef becomes light brown.

Now you should incorporate ¼ cup of brandy, and stir this into the mix. Also place ¼ cup of liver pâté or liver spread inside the pot. Start stirring again, and then you should let this all cook for 2 minutes. Afterwards, pour 1 8 oz. can of tomato sauce in, and then we will mix this in. Once it is well-integrated, you can place 2 cups of beef broth into the mixture. 

Put the cover on top, and then we will continue cooking this using low heat for a good 45 minutes to 1 hour. You can also stop once the beef is as tender as you would prefer it to be. Should this dry up, feel free to pour water inside.

Adding olives, bell peppers and other vegetables:

Let’s continue with our perfectly tender beef by adding 1 cup of pitted green olives, as well as 1 large carrot we’ve cubed. Keep the heat going so it can cook for 4 minutes. Then you can also integrate 1 large potato you’ve cubed, and 1 medium red bell pepper you’ve sliced. Stir your stew together again, and then wait for about 8 to 10 minutes again, letting this all cook. 

Now all you have to do is mix in some salt and pepper to your taste. And then you’re done! Put everything in your cooking pot into a serving bowl, and give this to your party of 5. Great job! You’ve just made some delicious Filipino Beef Kaldereta. The perks don’t end at the the taste though. This dish actually has advantages for your health!

Tomato sauce

One of the primary ingredients of Kaldereta is thick, yummy tomato sauce. This component is pretty loaded with vitamins and minerals because after all, this comes from the vegetable tomato. As such, it is a source of Vitamin C, K, B7, potassium, zinc and more. Because of its chromium content, it can also help balance your blood sugar levels. 

Plus, as you might have already heard, tomatoes contain lycopene. This is an antioxidant, which is great for keeping your body away from dangerous free radicals. With this, it can also provide some protection from certain types of cancer like that of the stomach, threat and ovaries.

Liver pâté 

This is an ingredient that can also offer quite a good deal of nutrients. This contains iron, which can aid in getting oxygen to move around your body, and get to the right places. Red bell pepper

Ingredients

  • 2 lbs. beef chuck sliced into cubes
  • 5 cloves garlic crushed and chopped
  • 1 red onion diced
  • 1 potato cubed
  • 1 carrot cubed
  • 1 cup green olives pitted
  • 1 red bell pepper sliced
  • 1/4 cup liver spread
  • 3 tablespoons cooking oil
  • 8 oz tomato sauce
  • ¼ cup brandy
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

  • Heat oil in a cooking pot. Sauté garlic and onion
  • Add the beef. Cook until light brown.
  • Pour-in brandy. Stir.
  • Add the liver pate or liver spread. Stir and continue to cook for 2 minutes.
  • Pour-in the tomato sauce; stir and add the beef broth. Cover and cook in low heat for 45 to 60 minutes or until the beef gets tender. Add water if needed.
  • Add the olives and carrots. Cook for 4 minutes.
  • Add the potato and bell pepper. Stir and cook for 8 to 10 minutes.
  • Sprinkle some salt and pepper. Stir and transfer to a serving bowl.
  • Enjoy with rice!

    Everything I’ve seen in the picture all of them looks as yammy.I will till my friends about this. all of them are my favorites dish my parent used to cook, although when I cook one of them it come out ok, but not perfict ,and always something is missing yet enough to eat,??
