There’s a reason why sinigang ranked as one of the best soups in the world. This tamarind stew is enriching due to its mix of vegetables, incredibly flavorful, and is sour like no other. And while one of its most well known ingredients is fish, it actually works with meat too. In this case, I’m talking about beef, which packs a lot of complex flavor and tender texture to your sinigang. You will definitely want to try out Beef Sinigang!
Filipino Beef Sinigang
For many Filipinos, this is the ultimate comfort food. Sinigang has a pleasantly sour broth that is sure to warm up your insides, while providing you with plenty of nutrients. Eggplant, string beans, and tomatoes are just a few of the vegetables you can find in this recipe. But the red meat definitely adds a level of depth and texture that upgrades your sinigang. The strong sinigang flavor collaborates perfectly with the beef, which adds its own savor to the dish.
Ingredients in Beef Sinigang
Since this is a vegetable dish, you may have expected a pretty long grocery list of things you will need. But I’d say we actually don’t have too many items on our ingredient list because we can make sinigang well with just the essentials.
- Beef neck bones – One adjective we really can use to describe beef neck bones is tender. The meat falls off the bone perfectly with this cut while having a beautifully rich flavor.
- Chinese eggplant – Eggplant is a signature feature of sinigang because its softness is quite nice with the hot stew and the meat.
- Okra – We’re continuing the trend of tender vegetables that are pleasant to eat with okra!
- String beans – But a bit of crunchiness won’t hurt our dish either. String beans provide a slight crispiness that complement the other veggies.
- Water spinach – Other than how delicious this can be, water spinach is great because it can do a lot in boosting your immune system.
- Onions – Don’t forget the onions for a strong flavor to your broth.
- Tomato – Provides some sweetness to our dish.
- Sinigang powder – We can’t have our irresistible sour soup without this main seasoning! Sinigang powder gives us all of the flavor we need in one convenient packet.
- Water – Let’s tie everything together with just enough water.
- Cooking oil – We’re still working with meat and vegetables after all, and so we will need oil to cook everything.
- Fish sauce – Last but not least is some fish sauce for saltiness.
How to Make Beef Sinigang
Let’s cook up some meaty Beef Sinigang!
1. Sautéing the onion and tomato
Get your pot, and pour the cooking oil inside. Heat up the oil before adding the onion. Now sauté the onion until the layers are nice and separated. You may proceed with the tomatoes afterwards, and keep sautéing.
2. Cooking the beef
ave your tomatoes softened? If the answer is yes, you may toss in your beef, which we will sauté too. Continue cooking until the beef is brown.
3. Letting the mixture simmer
Then add your water, and cover the pot. Wait for the liquid to boil before reducing the heat to the lowest setting. Let this simmer for 90 minutes. And then you may put your sinigang powder and eggplant inside. Just keep everything cooking for 3 minutes.
4. Adding more vegetables and seasonings
We can also place the okra and string beans inside, and cook this for 5 minutes. Now pour in your fish sauce.
Afterwards, add your kangkong, and cover the pot. You may now turn the heat off, and just let the pot sit with the lid on for 2 minutes. We need this step to get the residual heat to cook the sinigang further. After that, you are ready to serve the dish!
What to Serve with Beef Sinigang
You’ll want some warm white rice with your Beef Sinigang. But if like me, you love to have some more vegetables on the side, you may want to try Adobong Sitaw too. This is very easy to make and is incredibly healthy! But if you want an added ulam that’s also delightfully sour, but at the same time sweet too, I’ve got another recommendation for you. Beef Sinigang
Ingredients
- 4 lbs. beef neck bones
- 2 Chinese eggplant sliced
- 10 okras
- 15 string beans cut in 2-inch pieces
- 1 bunch water spinach cut into pieces
- 2 onions wedged
- 2 tomatoes wedged
- 3 ounces sinigang powder
- 8 cups water
- 3 tablespoons cooking oil
- Fish sauce to taste
Instructions
- Heat cooking oil in a pot. Sauté the onion until the layers separate. Add the tomatoes and continue sautéing until it softens.2 onions, 3 tablespoons cooking oil, 2 tomatoes
- Add the beef. Sauté it until it browns.4 lbs. beef neck bones
- Pour water into the pot. Cover and let boil. Reduce the heat to the lowest setting. Simmer for 90 minutes.8 cups water

- Add the okra and string beans. Cook for 5 minutes.10 okras, 15 string beans
- Season with fish sauce and then add the kangkong. Cover the cooking pot and turn the heat off. Let it stay closed for 2 minutes for the residual heat to cook it further.Fish sauce to taste, 1 bunch water spinach

Notes
- Spice level – Looking for a dish that has some heat? This may not be the one for you! However, there are plenty of sinigang recipes that like to integrate chili peppers. And so you may actually add some to this dish to get it as spicy as you’d like.
- Sweetness level – Sourness? We’ve got that here! Saltiness? It’s a yes on that flavor too. But this definitely is not a sweet dish.
- Sinigang powder – Can’t find any sinigang powder? You could actually use tamarind paste instead for this.
- Water spinach – We definitely love our leafy greens when it comes to sinigang. And so if you are unable to get your hands on water spinach, you can try utilizing kale instead. Another possible alternative would be regular spinach and bok choy.
