Heat cooking oil in a pot. Sauté the onion until the layers separate. Add the tomatoes and continue sautéing until it softens.

Add the beef. Sauté it until it browns.

Pour water into the pot. Cover and let boil. Reduce the heat to the lowest setting. Simmer for 90 minutes.

Add the sinigang powder and eggplant. Continue cooking for 3 minutes.

Add the okra and string beans. Cook for 5 minutes.

Season with fish sauce and then add the kangkong. Cover the cooking pot and turn the heat off. Let it stay closed for 2 minutes for the residual heat to cook it further.
Fish sauce to taste, 1 bunch water spinach
