Beef Sinigang

Ingredients

  • 4 lbs. beef neck bones
  • 2 Chinese eggplant sliced
  • 10 okras
  • 15 string beans cut in 2-inch pieces
  • 1 bunch water spinach cut into pieces
  • 2 onions wedged
  • 2 tomatoes wedged
  • 3 ounces sinigang powder
  • 8 cups water
  • 3 tablespoons cooking oil
  • Fish sauce to taste

Instructions

  • Heat cooking oil in a pot. Sauté the onion until the layers separate. Add the tomatoes and continue sautéing until it softens.

  • Add the beef. Sauté it until it browns.

  • Pour water into the pot. Cover and let boil. Reduce the heat to the lowest setting. Simmer for 90 minutes.

  • Add the sinigang powder and eggplant. Continue cooking for 3 minutes.

  • Add the okra and string beans. Cook for 5 minutes.

  • Season with fish sauce and then add the kangkong. Cover the cooking pot and turn the heat off. Let it stay closed for 2 minutes for the residual heat to cook it further.
    Fish sauce to taste, 1 bunch water spinach
  • Serve warm. Share and enjoy!

Notes

  • Spice level - Looking for a dish that has some heat? This may not be the one for you! However, there are plenty of sinigang recipes that like to integrate chili peppers. And so you may actually add some to this dish to get it as spicy as you’d like.
  • Sweetness level - Sourness? We’ve got that here! Saltiness? It’s a yes on that flavor too. But this definitely is not a sweet dish.
  • Sinigang powder - Can’t find any sinigang powder? You could actually use tamarind paste instead for this.
  • Water spinach - We definitely love our leafy greens when it comes to sinigang. And so if you are unable to get your hands on water spinach, you can try utilizing kale instead. Another possible alternative would be regular spinach and bok choy.
