Trust me when I say this is a recipe that’s been tried and tested. After all, it is a family recipe that we really love to have for dinner. Not only is the Baked Ginger Glazed Mahi-mahi satisfyingly salty and sweet, but it is also a healthy way of having your protein. - Salt and pepper – Of course, we will want our mahi-mahi well-seasoned even before the ginger glaze.
Ginger glaze:
- Ginger – It wouldn’t be that delightfully savory and very mildly spicy glaze without ginger!
- Light soy sauce – Expect slightly more saltiness with light soy sauce compared to the regular kind. But it definitely is the pleasant kind of salty that makes our mahi-mahi a lot more flavorful.
- Garlic – The garlic really completes the flavor of this glaze, adding to its umami factor.
- Olive oil – For some more moisture as well as a bit more complexity in flavor.
- Honey – The sweetness from our honey is a nice contrast against the savor.
- Balsamic vinegar – But it’s not just the honey bringing in a mildly sugary taste. The balsamic vinegar in this recipe is perfect for a combined smoky and sweet flavor.
How to Make Baked Ginger Glazed Mahi-mahi
- Rub salt and pepper all over the mahi-mahi. Let it stay for 10 minutes.
- Preheat oven to 450F.

Notes
- Spice level – Unfortunately for the people who like their food hot and spicy, this recipe is free of that. You can mainly expect saltiness and at best, notes of spiciness from the ginger.
- Sweetness level – The glaze provides somewhat of a sugary taste, but I’d say it doesn’t really go overboard on that. There is a nice balance between salty and sweet for our recipe!
- Honey – Missing honey? No need to fret because there are some alternatives we can try, starting with maple syrup. Another thing that may help bring that sweetness back would be brown sugar.
- Balsamic vinegar – Now there are other kinds of vinegar you can give a shot for this. Go ahead and utilize red wine vinegar or a mix of apple cider vinegar and brown sugar as substitutes!

Thank you fir or posting a delicious and easy recipe. I tried it this evening and both my husband and I loved it! I did not make any adjustments to the recipe except that I used Trader Joe’s ginger paste in place of fresh ginger. Served it with a peas and carrots combo, and jasmine rice. 🙂

I believe it is not. The ginger glaze helps neutralize the fishy taste. You may also use fish with milder flavor for this recipe so that it won’t be that fishy tasting. Flounder, catfish, and rainbow trout are good options.
