Ingredients

  • 1/4 cup butter
  • 2 slices white bread
  • 1 slice sharp cheddar cheese
  • 1 slice Mozzarella cheese
  • 1 slice Swiss cheese
  • 1 slice pepper jack cheese
  • 1/2 cup shredded hot Jalapeno cheese

Instructions

  • Melt half of the butter in a pan.

  • Sprinkle half of the shredded hot Jalapeno cheese on a slice of bread. Put the bread on the pan with the side with cheese facing down.

  • Top the slice of bread with sharp cheddar cheese, Mozzarella cheese, Swiss cheese, and pepper jack cheese. Cover with the other slice of bread.

  • Top the remaining hot Jalapeno cheese on top of the bread.

  • Remove the bread from the pan by sliding a spatula under the bread. Temporarily hold the bread in spatula.Melt the remaining butter.
  • Put the bread back on the pan with the other side with the unmelted cheese facing down. Continue to cook for 1 to 2 minutes in low to medium heat.
  • Remove the bread from the pan. Slice.
  • Serve with a Marinara sauce dip.

Notes

  • Choose bread that holds shape. Not all white bread toasts the same way. Some are too thin and collapse under the cheese weight. Use slightly firm slices that can stand heat without breaking or becoming limp.
  • Handle jalapeño cheese with care. Shredded jalapeño cheese melts fast, and it burns quickly if the heat is too high. I keep the pan on medium or just below and check for browning after a minute. If you're unsure about the spice, taste a pinch of the cheese before using it.
  • Where to find shredded hot jalapeño cheese. Some stores carry this in the specialty cheese section, not the standard shredded aisle. If it's unavailable, mix finely chopped jalapeños into Monterey Jack cheese as a workaround. I’ve done that in a pinch and it worked well.
  • Use a flat spatula with a firm edge. When flipping, the weight of all five cheeses can cause slippage. A broad spatula helps support the sandwich. Press down lightly to keep everything in place while the cheese finishes melting.
