Adobong Pusit

Tender squid simmered in soy sauce, vinegar, tomatoes, and garlic, then tossed in a rich, reduced savory sauce. Served warm with rice.

Ingredients

  • 2 lbs. squid cleaned
  • 1 piece onion chopped
  • 2 pieces tomatoes chopped
  • 8 cloves garlic chopped
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • ½ cup water
  • 1 teaspoon sugar
  • 3 tablespoons cooking oil
  • Salt and ground pepper to taste

Instructions

  • Heat the cooking oil in a wok.

  • Sauté the garlic until it starts to brown.

  • Add the onion, sauté for 30 seconds.

  • Add the tomatoes. Continue sautéing for 1 ½ minutes.

  • Put the squid into the wok. Sauté for 20 seconds.

  • Pour-in soy sauce, white vinegar, and water. Cover the wok. Let mixture boil.

  • Reduce the heat to the lowest setting. Cook the squid for 1 minute.
  • Remove the squid from the wok and place it on a clean bowl for the meantime. Note: leave the other ingredients in the wok.
  • Season the sauce with sugar, salt, and ground black pepper. Continue cooking until the sauce reduces in half.

  • Add the squid back into the wok. Gently toss.
  • Transfer to a serving bowl. Serve warm with rice.
