- 2 lbs. chicken cut into serving pieces
- 3 cups cooking oil
Breading ingredients
- 1 ½ cups all-purpose flour
- ¼ cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon ground white pepper
Marinade ingredients
- 2 cups buttermilk
- 1 ½ teaspoons salt
- ½ teaspoon ground black pepper
Combine marinade ingredients in a bowl. Mix well
Add chicken into the bowl. Cover and refrigerate for 8 hours.
Make the breading combining all breading ingredients in a mixing bowl. Mix well.
Heat 3 cups of oil in a pan.
Dredge the chicken pieces in the breading mixture. Deep fry the chicken for 14 minutes or until the internal temperature reads 165F. Note: you can extend the temp until it reaches 175F for dark meats. Also, it is a good practice to clip the chicken in the middle of the frying process to ensure that both sides are cooked evenly.
Remove the chicken from the pan and let it cool down for 10 minutes over a plate with a paper towel. Enjoy!
