Ingredients

  • 2 lbs. chicken cut into serving pieces
  • 3 cups cooking oil

Breading ingredients

  • 1 ½ cups all-purpose flour
  • ¼ cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon ground white pepper

Marinade ingredients

  • 2 cups buttermilk
  • 1 ½ teaspoons salt
  • ½ teaspoon ground black pepper

Instructions

  • Combine marinade ingredients in a bowl. Mix well
  • Add chicken into the bowl. Cover and refrigerate for 8 hours.
  • Make the breading combining all breading ingredients in a mixing bowl. Mix well.
  • Heat 3 cups of oil in a pan.
  • Dredge the chicken pieces in the breading mixture. Deep fry the chicken for 14 minutes or until the internal temperature reads 165F. Note: you can extend the temp until it reaches 175F for dark meats. Also, it is a good practice to clip the chicken in the middle of the frying process to ensure that both sides are cooked evenly.
  • Remove the chicken from the pan and let it cool down for 10 minutes over a plate with a paper towel. Enjoy!
