Ampalaya with Eggs

- 2 bitter melons cored and sliced into thin pieces
- 4 cloves garlic chopped
- 2 eggs beaten
- 1 tomato diced
- 1 onion sliced
- 3 Tablespoons cooking oil
- Salt and ground black pepper to taste
Heat the pan and pour-in cooking oil.
Sauté the garlic, tomato, and onion until the latter softens.
Add the bitter melon. Stir-fry for 3 minutes.
Push the contents of the pan to the side to create an open space. Pour beaten egg and quickly stir it. Continue to cook until the eggs become firm. Chop it into pieces using your spatula and mix with the other ingredients.
Season with salt and ground black pepper.
Serve hot with rice. Share and enjoy!
