Patis Fried Chicken

- 1 ½ lbs. chicken cut into serving pieces
- 5 tablespoons patis fish sauce
- 4 tablespoons all-purpose flour
- 4 tablespoons cornstarch
- 1 piece egg
- 3/4 cup water
- ¼ teaspoon ground black pepper
- 2 cups cooking oil
Arrange chicken in a large bowl. Add the 3 tablespoons patis and ground black pepper. Mix and marinate for at least 30 minutes.
Combine flour and cornstarch in a large container. Stir until blended. Add egg, water, and remaining patis. Mix well.
Heat oil in a cooking pot. Dip the chicken in the flour mixture.
Fry for 14 minutes or until the internal temperature registers at least 165F.
Remove chicken from the pot. Let it cool down for 10 minutes. Transfer to a serving plate. Serve with rice.
