Coke Pork Adobo

- 2 lbs pork belly cubed
- 4 tablespoons white vinegar
- 5 tablespoons soy sauce
- 5 cloves garlic crushed
- 12 ounces Coke
- 1 1/2 teaspoons whole peppercorn
- 4 pieces bay leaves
- 3 tablespoons canola oil
Heat pan. Add oil.
While oil is heating, add the garlic. Saute until it turns light brown.
Add pork. Continue sautéing until the outer part of the pork turns light brown.
Pour-in soy sauce and vinegar. Let boil. Stir and cook for 1 minute.
Pour Coke into the pot. Let boil. Add whole peppercorn and bay leaves. Cover and cook using low heat for 45 minutes.
Remove the pot cover. Continue cooking while stirring once in a while until sauce completely evaporates.
Transfer to a serving bowl. Serve with warm rice.
