Pork Menudo with Hotdog Recipe

- 1 lb. pork shoulder sliced into small cubes
- 1 potato cubed
- 3 oz pork liver cubed
- 2 hotdogs sliced
- 1 carrot cubed
- 1 onion diced
- 4 cloves garlic crushed and chopped
- 8 oz tomato sauce
- 2 cups beef broth
- 5 tablespoons cooking oil
- 1 teaspoon sugar
- Salt and pepper to taste
Heat oil in a pan.
Stir-fry (or pan-fry) the potato and carrot for 3 minutes. Set aside.
Using the same pan, heat the remaining oil. Add more if needed.
Saute onion and garlic until the onion gets soft.
Add the pork. Saute for 2 minutes.
Stir-in the liver; saute for 2 minutes.
Add the hotdogs. Stir. Pour-in tomato sauce and beef broth; stir and let boil.
Cover and cook in low heat until the pork gets tender.
Add sugar, ground black pepper, and salt. Stir.
Put-in the fried potato and carrot and cook for 2 to 3 minutes. Serve!
- Aside from pork, chicken can also be used when making menudo. You can omit the hotdogs too.
- It is ideal that the pork gets really tender before adding the vegetables. Otherwise, your veggies might get mushy.
- Be liberal on your seasoning. Filipino food are generally tasty.
